In the 1990s Bechara Karam, the current owner of El Saha, ran a bakery in nearby Manlius, New York. At this location, his best selling product was his Pita bread. He simply called it "Pita El Saha" and sold it not only to the bakery's customers, but other restaurants, supermarkets, and wholesalers.
Because Bechara's Pitas had such a great following, his customers encouraged him to open up a restaurant of his own. In 2002, he purchased the space on Marshall Street in Syracuse, New York where El Saha currently stands.
More than just pitas, but keeping the same name, El Saha took off as an affordable, healthy, fast-food alternative for University students. Despite the competition from other Middle Eastern chains in the area, El Saha has survived since 2003, and has proven that it is the best pita place in Syracuse if not in the USA.
